Easy Fish Baked in Foil with Vegetables

 

Make fast work of this dish by assembling it early in the day. Experiment with a variety of fresh or frozen ( defrosted) fillets, such as salmon, cod, haddock, Pollack, perch or halibut.

 

 

I teaspoon canola or olive oil

1 cup snow peas or snap peas

1 tomato, quartered

1/8 teaspoon dried tarragon or oregano

 8 ounce fish fillet( see suggestions above)

Salt and pepper to taste

Lemon for garnish

 

 

Preheat oven to 350 degrees F. Lightly oil two 12-inch squares of aluminum foil, Arrange the vegetables on the foil, sprinkle with the tarragon, and place fish on top of the vegetables. Loosely wrap the foil around the fish, pinching the edges together, leaving about 2 inches of space between the top of the fish and the foil.

Bake for 25 to 30 minutes, or until the fish is firm and opaque and the vegetables are tender. Remove from the foil and swerve hot. Sprinkle with salt and pepper garnish with lemon.
