Quick and Easy Stuffed Eggplant

When the small tender eggplants are on sale I buy them and stuff them with sautéed vegetables,  a little cheese and roast them until the skins are tender.

Cut out eggplant pulp for cooking

Slice the eggplant in half,  cut out the inside flesh, but do not break the skin.



Chop the eggplant pieces and cook with assorted chopped vegetables, such as onion, celery, carrots, or  peppers and of course some garlic and season with salt and pepper to taste. You need about 1/2 cup of cooked vegetables per eggplant half.  Once the eggplant is stuffed, bake for thirty minutes until the skin is tender and serve as a side vegetable, it will add a little pizzazz to  any menu.
