Caprese Pizza

When I make pizza at home I either make my own crust and roll it very thin, or I buy Mama Mary’s Ultra thin pizza crust. They come two to a package, and because each crust is thin and weighs only 6 ounces,

it is the lowest calorie crust I can find. 

It is important to chose a thin pizza crust, because each ounce of crust is equal to one slice of bread. When you use a one-pound pizza dough to make pizza, your crust will include the equivalent of 16 slices of bread. An amount of bread very few of us can afford to eat.

To make this pizza you will need:

One prepared thin crust pizza

1 pound canned petite diced tomatoes, drained

1-2 tbsp pesto oil

salt and pepper

4 ounces sliced, fresh mozzarella

6-10 black olives chopped

 

Brush the crust with one or two tablespoons of Pesto Oil, season with salt and pepper and cook in a 375 degree pre-heated oven for 10 minutes.

Remove the crust from the oven, cover with the drained tomatoes ( get as much liquid out of the tomatoes as you can , so the crust does not get soggy. Save the tomato liquid and add it to a soup broth it will add flavor)

Top the tomatoes with  slices of mozzarella, sprinkle with the olives. Bake in a preheated oven  375 degrees for 15 minutes or until cheese is a hot  and lightly browned.

Makes 6 slices about 200 calories per slice.
