Menu of the Month- Lemon Chicken


Menu of the Month Lemon Chicken with Quick Potatoes , Green Beans with Tomatoes, Braised Carrots with Scallions. The entire menu has  about 415 calories and  the right balance of vegetables to protein and starch.

The Carrots are simmered in broth and topped with scallions for a little crunch 







The green beans are combined with tomatoes and seasoned with just a little bit of cheese for flavor.  








If you want a delcious dessert, prepare the Pound Cake with Pears, it has about 235 calories with most of the calories coming from the pound cake. 

To cut calories, simply skip the pound cake altogether, (calories will drop by  half) and top warm pears with a drizzle of caramel and a little cream.

    This recipe looks fantastic. My family loves lemon chicken, and you’ve given some great ideas here! The carrots look delicious.
