I had a refrigerator full of red food and what a beautiful salad it made. Line a platter with crisp, clean greens and top with sliced radishes, red grapes, chopped red tomatoes and sliced red onion and sprinkle with a little olive oil, a splash of red balsamic vinegar and salt and pepper to taste.
You will be eatting lots of fiber and the red pigmented fruits and vegetables are being credited with improving our vision and protecting our heart. Enjoy!
