Protein helps Dieters

I think eggs are a great food particularly when served with vegetables and I am happy to be a Registered Dietitian Advisor (RDA) to the Egg Nutrition Center (ENC) . As an RDA I often receive nutrition updates from the ENC and here is the latest one about protein helping with appetite: Protein and Weight.

 Of course you can make scrambled eggs for breakfast but I recently went to a local restaurant where they served eggs baked in a rich tomato sauce- it was terrific so I recreated it at home with equally good results.

Egg Baked in Tomatoes

I preheated the oven to 350 degrees. In a small oven-safe dish I added 3/4 cup homemade tomato sauce ( you can use canned diced tomatoes if you don’t have a good  sauce) and heated the sauce in the microwave for one minute just to warm it up. I added one of my own fresh eggs and baked it for about 25 minutes or until the yolk was cooked and no longer runny. I served it with a slice of whole wheat toast and it was delicious and of course it was rich in  protein and vegetables.
