Grilled Romaine- My New Favorite Vegetable

It’s summer, it’s hot and I like to use my grill as often as I can. When I learned I could cook Romaine on the grill I made it three nights in a row!

Rinse the Romaine, running the water so the inside leaves remove any grit. Shake the leaves to remove excess water then  cut right down the center. Brush the cut ends with olive oil and place on a pre-heated  grill for 2-5 minutes until the leaves are hot and the  outside edges crisp.  Remove and drizzle with a good cheese salad dressing,  add  chopped olives and tomatoes or diced roasted pepper. Serve warm and get ready to accept compliments.
