Two Quick Salads

Tortellini Vegetable Salad and Chicken Salad with  Grapes and Celery

Here are two quick salads I can cook and assemble  simultaneously and have on the table almost as quickly as it takes to boil water. If you are cooking for one poach one chicken breast. You will have leftovers to take to work or to enjoy the next day and you will not have to cook- perfect for a hot night.
Tortellini Vegetable Salad
Ingredients for the salad : a package of frozen cheese tortellini, frozen green beans, and enough mayonnaise to suit your taste

Step One: Cook the tortellini as directed on the package. In the last minute of cooking add the frozen green beans. Stir into the hot water. This is just enough cooking time to thaw the beans without overcooking them. You want them nice and crunchy.

Step two: drain the tortellini and green beans, toss with the mayonnaise ands refrigerate

Chicken Salad with Red Grapes

Ingredients: one or two skinless boneless chicken breasts, one bay leaf, 1/2 to 1 cup red grapes sliced, 2 stalks of celery chopped, mayonnaise to taste

Step One: Chop the celery and set aside

Step two: Place the chicken breasts in a pot of cold water, enough water to cover the chicken add the bay leaf and simmer covered for twenty minutes or until the chicken is cooked through and no longer pink in the middle.

Step three: Chop the cooked chicken, toss with the celery and grapes and enough mayinaise to suit your taste. refrigerate until ready to serve.

Line a plate with fresh lettuce greens and red onion top with the chisken and tortelini salad and enjoy!
