Why Did I not Think of This Before?

Everyday I want to eat a generous serving of vegetables at lunch. I tuck lettuce and tomatoes in my sandwich but that does not amount to much. This morning as I was headed to work I grabbed the bag of coleslaw (shredded red and green cabbage with shredded carrots)  placed about 2 cups in a plastic container and topped it with a tablespoon of blue cheese dressing. Instantly I had a quick and delicious side salad perfect to go with my sandwich when lunch time came. The blue cheese dressing was the part I had never thought of before it is much easier to add then mayonnaise and vinegar and I think the flavor is really special.  I suppose if you do not like blue cheese dressing you could use any creamy dressing with equally good results.

    One way I add a generous serving of vegetables at lunch is to have side of ratatouille along with my sandwich. I make batches with the summer harvest, freeze lunch size containers, and when it is cold outside I pull them out for my lunch and it is like eating sunshine! Yum!

    Great idea! So much better than canned soup.
