Corn, Crab and Salsa Salad

A quick and delicious salad is a boon to any healthful diet. I call this Corn, Crab and Salsa Salad all you need to make a salad for two is:  2-4 cups  greens for a salad (I like baby spinach) one can  ( 15 ounce) unsalted corn,  a  6 ounce can of your favorite crab meat, and some  good salsa. Top two cups of  fresh greens with a 3/4 – 1 cup of corn, 1/2 the crab meat and finish with a generous dollop of salsa. Eat one salad today and refrigerate the second and enjoy tomorrow. Take the ingredients to work and you can assemble this salad in no time for a delicious, fast lunch.  I find crab meat has a much milder smell then other canned fish  so you won’t have to worry about complaints from coworkers. The whole salad has only about 250 calories and it tastes great!
